Honey-Glazed Salmon Salad

Enjoy this fresh salad alternative for lunch, dinner or to take to an afternoon barbecue! This is a healthy way to enjoy greens and protein this summer.

1 tbsp honey
6 chopped almonds
2 tbsp Parmesan cheese
2 tbsp salad dressing, light
2-4 cups spinach, raw
170g salmon fillet
12 tbsps dried cranberries


  1. Preheat grill to medium high. Brush salmon with honey and grill for 15-20 minutes or until fish flakes easily with a fork.
  2. Serve salmon atop spinach with chopped almonds, dried cranberries and Parmesan cheese, drizzled with dressing.
