Seared Salmon with Avocado, Onion & Fresh Spinach Relish
75 grams salmon filet(s) (1 filet is 3 oz)
pepper - black (ground)
1/4 tsp(s) capers
1/2 avocado(s) - medium
1/8 onion(s) - red
10 grams spinach leaves - fresh
1 tsp(s) oil - olive
28 grams pasta - penne - whole wheat (dry)
1. Spray a nonstick large sauté pan and set aside. Squeeze a lemon half over the salmon and sprinkle with the pepper and salt.
2. Heat the skillet until very hot. Place the salmon pieces in the pan and cook, over high heat, for three to five minutes per side.
3. Meanwhile, cook pasta according to package instructions. Drain and set aside.
4. In a small bowl combine lemon juice from the other half of the lemon, capers, olive oil, chopped avocado, chopped or sliced onion and spinach. Serve Salmon over whole wheat pasta and spinach mixture.
